PREVENTING CUPCAKE CASES SEPARATING FROM THE ACTUAL CUPCAKE

Hi,
I have been asked how to stop the cupcake case separating from the actual cupcake once it's baked. I have baked 100's over the years and just a couple of times it's happened to me. I think the answer is to take the cupcakes out of the cupcake tin as soon as they come out of the oven. Because I'm usually in a rush to get the next batch in the oven, they are straight out and on to a cooling rack and this seems to work fine. I then store them in a cardboard cupcake box or cake box, not in a tin. If anyone out there has any suggestions, please let me know.

Hi Lin

A hot sugar syrup added just after the cakes come out of the oven usually works a treat. Learnt that from the Sugarcraft Exhibition in Surrey 2010.
